5-Minute Peanut Chili Noodles
Ingredients
- 9 oz hand-cut thick noodles (or any noodles you like)
- 1.5 tbsp peanut butter
- 1 tsp chili flakes (optional)
- 1/3 cup fresh green onion, sliced
- 2 tsp sesame seeds
- 5 garlic cloves, minced
- 1 tbsp white sugar (optional)
- 1 tbsp chili crisp
- 1 tbsp rice vinegar
- 2 tbsp dark soy sauce
- 1/3 cup neutral oil (avocado oil recommended)
- 3 tbsp reserved pasta water (optional)
Garnishes
- 2 tbsp extra chili crisp
- More sliced green onion
- Fresh lime wedges
Preparation
Bring a pot of salted water to a boil and cook the noodles according to package instructions, undercooking them by about 30 seconds as they will finish in the sauce
Save some pasta water, then drain and rinse the noodles under cold water to prevent sticking
In a cold pan, add peanut butter, chili flakes, green onion, sesame seeds, garlic, sugar, 1 tablespoon chili crisp, rice vinegar, and dark soy sauce
Heat 1/3 cup neutral oil until very hot, then carefully pour it over the ingredients in the pan and stir everything together
Add the noodles to the sauce and coat them thoroughly
For extra silkiness, heat on medium-low, add 2-3 tablespoons of reserved pasta water, and mix well
Turn off the heat and top with more green onion, extra chili crisp, and lime wedges
Tips
Best served with chicken, shrimp, or tofu for added protein
