Vegan Malaysian Char Kway Teow
Ingredients
- 200g homemade flat rice noodles
- 1/2 block of firm tofu, diced
- 100g choy sum
- Handful mung bean sprouts
- 3 cloves garlic, chopped
- 1 small onion, chopped
- 2 tbsp vegetarian oyster sauce
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1/2 tsp white pepper
- 1 tsp dark soy sauce (optional)
- 1/4 cup water, as needed
- Oil for cooking
Preparation
Heat oil and pan-fry the tofu until browned, then set it aside. Add garlic and onion, and sauté until fragrant.
Add the choy sum and cook for 2 minutes. Then add the homemade flat rice noodles, vegetarian oyster sauce, sesame oil, soy sauce, white pepper, water, and dark soy sauce for coloring.
Stir-fry for a few more minutes, then add the mung bean sprouts. Stir-fry until well combined, and transfer to a serving plate.
Serving suggestions
Enjoy with sambal, chilli garlic sauce, or bird’s eye chilli with soy sauce.
