Traditional Indian Spinach Onion Chutney

Ingredients

  • 3 medium onions
  • 1 tablespoon Kashmiri red chili powder
  • salt to taste
  • 2-3 tablespoons oil
  • 2 teaspoons chana dal
  • 2 teaspoons urad dal
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 whole dry red chilies
  • fresh curry leaves
  • pinch of asafoetida
  • 3-4 cloves garlic, finely chopped
  • 1/2 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 200 grams chopped spinach

Optional

  • small piece of tamarind

Preparation

  1. In a blender, combine 3 medium onions, 1 tablespoon Kashmiri red chili powder, salt to taste, and optionally a small piece of tamarind, then blend into a smooth paste

  2. In a pan, heat 2-3 tablespoons oil

  3. Add 2 teaspoons chana dal and 2 teaspoons urad dal

  4. When the dal turns mild red, add 1 teaspoon cumin seeds and 1 teaspoon mustard seeds

  5. Add 2 whole dry red chilies, fresh curry leaves, and a pinch of asafoetida

  6. Add 3-4 finely chopped garlic cloves

  7. Add the onion paste and sauté until cooked

  8. Add 1/2 teaspoon turmeric powder and 2 teaspoons coriander powder

  9. Add 200 grams chopped spinach and mix well

  10. Cook for 5-7 minutes until done

Tips

  1. Serve with roti, naan, or rice, optionally with ghee

  2. This dish is suitable for lunch boxes and is a nutritious vegetarian option
