Traditional Indian Spinach Onion Chutney
Ingredients
- 3 medium onions
- 1 tablespoon Kashmiri red chili powder
- salt to taste
- 2-3 tablespoons oil
- 2 teaspoons chana dal
- 2 teaspoons urad dal
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 whole dry red chilies
- fresh curry leaves
- pinch of asafoetida
- 3-4 cloves garlic, finely chopped
- 1/2 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 200 grams chopped spinach
Optional
- small piece of tamarind
Preparation
In a blender, combine 3 medium onions, 1 tablespoon Kashmiri red chili powder, salt to taste, and optionally a small piece of tamarind, then blend into a smooth paste
In a pan, heat 2-3 tablespoons oil
Add 2 teaspoons chana dal and 2 teaspoons urad dal
When the dal turns mild red, add 1 teaspoon cumin seeds and 1 teaspoon mustard seeds
Add 2 whole dry red chilies, fresh curry leaves, and a pinch of asafoetida
Add 3-4 finely chopped garlic cloves
Add the onion paste and sauté until cooked
Add 1/2 teaspoon turmeric powder and 2 teaspoons coriander powder
Add 200 grams chopped spinach and mix well
Cook for 5-7 minutes until done
Tips
Serve with roti, naan, or rice, optionally with ghee
This dish is suitable for lunch boxes and is a nutritious vegetarian option
