Baked Zucchini and Potato Tortino
Ingredients
- 4 zucchini
- 2 boiled potatoes
- 2 eggs
- 150 g ricotta
- 60 g grated Parmesan cheese
- 40 g breadcrumbs
- olive oil
- salt
- pepper
Preparation
Grate the zucchini and potatoes.
In a large bowl, mix the grated zucchini and potatoes with the eggs, ricotta, grated Parmesan cheese, breadcrumbs, salt, and pepper until well combined.
Grease a baking dish with olive oil.
Pour the mixture into the prepared dish and spread it evenly.
Preheat the oven to 180°C and bake for 30-40 minutes until golden and set.
