Baked Zucchini and Potato Tortino

Ingredients

  • 4 zucchini
  • 2 boiled potatoes
  • 2 eggs
  • 150 g ricotta
  • 60 g grated Parmesan cheese
  • 40 g breadcrumbs
  • olive oil
  • salt
  • pepper

Preparation

  1. Grate the zucchini and potatoes.

  2. In a large bowl, mix the grated zucchini and potatoes with the eggs, ricotta, grated Parmesan cheese, breadcrumbs, salt, and pepper until well combined.

  3. Grease a baking dish with olive oil.

  4. Pour the mixture into the prepared dish and spread it evenly.

  5. Preheat the oven to 180°C and bake for 30-40 minutes until golden and set.
