Baked Zucchini with Cheese and Eggs
Ingredients
- 2 zucchini
- Salt and black pepper to taste
- 3 eggs
- 1/2 teaspoon salt
- 1 tablespoon corn starch
- 0.5 teaspoon paprika
- 0.5 teaspoon basil
- 2 tablespoons sour cream (30% fat)
- 1 cup flour
- Vegetable oil (for greasing)
- 250 grams cheese
- 2 tomatoes
- 1 clove garlic
Preparation
Preheat the oven to 180°C and grease a parchment-lined baking sheet with vegetable oil.
Grate the zucchini and mix it in a bowl with eggs, flour, corn starch, 1/2 teaspoon salt, paprika, basil, sour cream, and salt and black pepper to taste.
Spread the mixture evenly on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes.
Remove from oven, top with sliced tomatoes, minced garlic, and shredded cheese.
Return to the oven and bake for an additional 5 minutes at 180°C until cheese is melted.
