Baked Zucchini with Cheese and Eggs

Ingredients

  • 2 zucchini
  • Salt and black pepper to taste
  • 3 eggs
  • 1/2 teaspoon salt
  • 1 tablespoon corn starch
  • 0.5 teaspoon paprika
  • 0.5 teaspoon basil
  • 2 tablespoons sour cream (30% fat)
  • 1 cup flour
  • Vegetable oil (for greasing)
  • 250 grams cheese
  • 2 tomatoes
  • 1 clove garlic

Preparation

  1. Preheat the oven to 180°C and grease a parchment-lined baking sheet with vegetable oil.

  2. Grate the zucchini and mix it in a bowl with eggs, flour, corn starch, 1/2 teaspoon salt, paprika, basil, sour cream, and salt and black pepper to taste.

  3. Spread the mixture evenly on the prepared baking sheet.

  4. Bake in the preheated oven for 20-25 minutes.

  5. Remove from oven, top with sliced tomatoes, minced garlic, and shredded cheese.

  6. Return to the oven and bake for an additional 5 minutes at 180°C until cheese is melted.
