Rigatoni in Rich Tomato Sauce
Ingredients
- 3 cups rigatoni
- 1/4 cup vegan butter
- 3 tbsp cornmeal
- 1 1/2 cups plant based milk
- 2 tbsp tomato paste
- 1 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
Preparation
Cook the rigatoni according to package instructions.
Meanwhile, melt the butter in a pan and then add the flour, stirring for around 30 seconds.
Then, gradually pour in the milk around 1/4 cup at a time, whisking to thicken it.
When you’ve added all the milk, stir in the tomato paste, smoked paprika, garlic powder, salt and pepper.
Drain and rinse the pasta and mix it with the sauce before serving.
