Simple Vegan Lentil Spaghetti
Ingredients
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 tin lentils, drained and rinsed
- 250-300g tomato passata
- 1 tsp chilli powder
- 1 tsp mixed herbs
- 1 stock cube, crushed
- A generous amount of black pepper
- A splash of plant milk
- Spaghetti
Preparation
Cook the spaghetti according to package instructions and reserve a cup of water before draining.
Fry the onion in a pan for five minutes, stirring regularly.
Add the garlic and fry for another minute.
Add the lentils, passata, herbs, spices, stock cube, and milk to the frying pan and cook until the sauce thickens.
Mix the sauce with the drained spaghetti; if needed, add some reserved water to loosen the sauce.
