Quick Vegan Chickpea Ramen

Ingredients

  • 1 cup broccoli chopped
  • 1/2 cup fresh or frozen peas
  • 1 cup chopped mushrooms
  • 15 oz can chickpeas rinsed
  • 3 rice ramens
  • 3/4 cup cashew milk
  • 3 tbsp nutritional yeast
  • 1/4 cup soy sauce or tamari
  • 3 tsp sesame oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Preparation

  1. Cook ramen per package directions. About 1 minute before it’s done, add broccoli, peas, and mushrooms to the boiling water. When finished, drain in a strainer and rinse with cold water.

  2. Whisk cashew milk, soy sauce, nutritional yeast, sesame oil, garlic powder, and onion powder. Add to a heated pan along with chickpeas. Next, add the veggies and ramen, combine, and heat through. Serve.

Notes

  1. This recipe takes about 10 minutes to prepare. You can substitute cashew milk with another plant-based milk.
