Spicy Udon Stir Fry
Ingredients
- 1 package udon noodles
- 8 oz extra firm tofu
- 1 large carrot
- 2 green onions
- 4 garlic cloves
- 2 tablespoons grape seed oil
Sauce
- 2 tablespoons vegan oyster sauce
- 1 1/2 tablespoons dark soy sauce
- 1 tablespoon soy sauce or tamari
- 2 teaspoons rice vinegar
- 1 1/2 tablespoons sambal oelek
- 2 teaspoons sugar
- White pepper to taste
Preparation
Make the sauce by combining all of the ingredients and set aside.
Using a fork or your fingers, crumble the tofu to resemble ground beef. Press or drain the tofu thoroughly before cooking.
Add the udon noodles to boiling water and cook for about 1 minute. Drain and rinse with cold water. Set aside.
On medium-high heat, sauté the crumbled tofu in about 1 tablespoon of oil until browned.
Add 3 tablespoons of the sauce to the tofu and continue to cook until crisp.
Remove the tofu and set aside. In the same pan, add another tablespoon of oil and sauté the carrots for a minute or two before adding the garlic and green onions. Cook until the garlic becomes fragrant.
Add in the cooked udon noodles and stir. Cook for about a minute.
Add in the cooked tofu and mix well. Continue to cook for a minute while stirring.
Add in the remaining sauce and mix together making sure everything is well coated. Heat through and serve.
