Quick Spicy Gochujang Spaghetti

Ingredients

Sauce

  • Melted vegan butter
  • 2 spring onions (chopped)
  • Handful of fresh basil
  • 2 tbsp tomato purée
  • 1 tsp Gochujang (more or less to taste)
  • 250 ml pasta water
  • 100 ml vegan cream

Pasta

  • 250 g spaghetti

Toppings

  • Fresh basil
  • Nutritional yeast

Preparation

  1. Cook the spaghetti according to package instructions.

  2. Sauté spring onions in melted butter.

  3. Add tomato purée and Gochujang, then stir until combined.

  4. Pour in pasta water and vegan cream, then simmer.

  5. Add chopped basil.

  6. Toss in cooked spaghetti and mix well.

  7. Top with fresh basil and nutritional yeast
