Lebanese Nights Semolina Pudding

Ingredients

  • 6 cups milk
  • 1 cup fine semolina
  • 1/2 cup sugar
  • 1/2 cup Aleppo pistachios
  • 1/4 cup rose water

For serving

  • qaymak
  • nuts
  • coconut
  • syrup or attar

Preparation

  1. Bring a wide serving dish.

  2. In a wide pot, place milk, semolina, and sugar; stir to mix, then put the pot on heat with continuous stirring until it boils and add rose water.

  3. Pour about two-thirds of the mixture into the dish to a thickness of approximately 1 cm.

  4. Add the Aleppo pistachios to the remaining mixture, then spread it over the dish and refrigerate for several hours.

  5. Spread qaymak, if desired and optional, on the surface of Lebanese Nights in a thin layer.

  6. Sprinkle a generous amount of nuts as desired.

  7. Serve Lebanese Nights with syrup or attar, or you can use honey.
