Halloumi and Avocado Salad

Ingredients

  • 200g halloumi cheese
  • 1 avocado
  • 250g tomatoes (cherry or regular)
  • 1 small cucumber
  • 1 bell pepper
  • 1 stalk of celery
  • 1/2 red onion
  • 60g Kalamata olives
  • a few sprigs of parsley
  • 2 teaspoons olive oil
  • 1 tablespoon lemon juice
  • salt, pepper

Preparation

  1. Cut the halloumi cheese in half and then into thick cubes. Brown them in a lightly oiled skillet. The cheese will release water at first, then brown nicely.

  2. Cut the vegetables to preference. Peel the avocado, remove the pit, and slice it.

  3. In a large bowl, put the tomatoes, cucumber, celery, bell pepper, and parsley.

  4. Add the browned halloumi, season with salt, pepper, lemon juice, and olive oil.

  5. Serve immediately and enjoy each bite.
