Roman Style Baby Fried Artichokes

Ingredients

  • Baby artichokes
  • Olive oil, for frying
  • Sea salt
  • Lemon, for serving

Preparation

  1. Prepare the artichokes by trimming the stems, removing tough outer leaves, and cutting the tops. Soak in water with lemon juice to prevent browning

  2. Heat olive oil in a deep fryer or heavy pot to 350°F (175°C)

  3. Fry the artichokes gently until golden and crispy, about 5 to 7 minutes

  4. Remove and drain on paper towels

  5. Dust with sea salt and serve with lemon wedges

Notes

  1. This dish is inspired by the Roman Jewish specialty Carciofi alla Giudia, traditionally served in Rome's Jewish ghetto

  2. Baby artichokes are used for their tenderness and smaller size
