Baked Cactus Rolls with Vegetables

Ingredients

  • cactus paddles
  • 1 chopped squash
  • 1 Roma tomato
  • 1/4 white onion
  • 1/2 cup cooked garbanzos
  • handful of spinach
  • 1/3 cup cilantro
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chopped garlic
  • salt and pepper to taste

Optional additions

  • beans
  • hummus
  • vegan cheese
  • sauce
  • cashew cream

Preparation

  1. Preheat the oven to 375°F.

  2. Slice the cactus paddles halfway.

  3. Bake the sliced cactus for 20-25 minutes or until soft and golden.

  4. Sauté the vegetables and seasonings until softened.

  5. Assemble the rolls by adding optional ingredients inside the cactus, topping with sautéed vegetables, and rolling up.

Tips

  1. Serve with spicy salsa for added flavor.
