Ingredients
- Assorted vegetables for roasting
- Corn tortillas
- Mozzarella cheese
- Panela cheese
- Ham (optional)
- Avocado
- Fresh tomato
- Cilantro
- Salsa
Preparation
Roast the chosen vegetables in the oven or skillet until tender.
Assemble quesadillas by placing cheese and vegetables on tortillas and folding them.
Cook the quesadillas in a skillet until the cheese melts and tortillas are crispy.
Serve with avocado, tomato, cilantro, and salsa.
Tips
Use any vegetables you have on hand for roasting.
Add ham or other meats if desired to some quesadillas.
Substitute corn tortillas with flour tortillas or pita bread if preferred.
