The Best Vegan Tacos
Ingredients
Meat
- 20 oz can young green jackfruit (10 oz drained)
- 1 onion
- 1 tbsp paprika
- 1 tsp chili powder
- 2 tsp garlic powder
- 2 tsp salt
- 2 tbsp BBQ sauce
- 1 can crushed tomatoes
- Oil for frying
Sauce
- 1 avocado
- 1/2 spicy green pepper
- A bunch of cilantro
- Juice from a lime
- 1/4 cup vegan yogurt or cream cheese
- Drizzle of olive oil
- Salt to taste
Toppings
- 8 tortillas of choice
- Pickled red onion
- Cilantro
- Vegan cheese (optional)
Preparation
Rinse the young green jackfruit and pull it apart with your hands, removing any seeds in the process.
Add a drizzle of oil to a pan followed by the sliced onion. Fry for 2 minutes, then add the jackfruit and fry for 5 more minutes. Add the seasoning, mix, and add the crushed tomatoes. Cook for 5 minutes or until fully cooked. Set aside.
Heat a pan with some oil, dip the tortillas in the sauce, and place in the pan. Add a handful of cheese, the jackfruit “meat”, pickled onions and cilantro, fold in half, and cook on both sides until golden.
To make the sauce, add all the ingredients into a food processor or blender and blend until smooth.
Serve the tacos with the sauce and enjoy.
