The Best Vegan Tacos

Ingredients

Meat

  • 20 oz can young green jackfruit (10 oz drained)
  • 1 onion
  • 1 tbsp paprika
  • 1 tsp chili powder
  • 2 tsp garlic powder
  • 2 tsp salt
  • 2 tbsp BBQ sauce
  • 1 can crushed tomatoes
  • Oil for frying

Sauce

  • 1 avocado
  • 1/2 spicy green pepper
  • A bunch of cilantro
  • Juice from a lime
  • 1/4 cup vegan yogurt or cream cheese
  • Drizzle of olive oil
  • Salt to taste

Toppings

  • 8 tortillas of choice
  • Pickled red onion
  • Cilantro
  • Vegan cheese (optional)

Preparation

  1. Rinse the young green jackfruit and pull it apart with your hands, removing any seeds in the process.

  2. Add a drizzle of oil to a pan followed by the sliced onion. Fry for 2 minutes, then add the jackfruit and fry for 5 more minutes. Add the seasoning, mix, and add the crushed tomatoes. Cook for 5 minutes or until fully cooked. Set aside.

  3. Heat a pan with some oil, dip the tortillas in the sauce, and place in the pan. Add a handful of cheese, the jackfruit “meat”, pickled onions and cilantro, fold in half, and cook on both sides until golden.

  4. To make the sauce, add all the ingredients into a food processor or blender and blend until smooth.

  5. Serve the tacos with the sauce and enjoy.
