Vegan Tacos Al Pastor

Ingredients

  • 20 oz jackfruit in brine
  • 1 cup wheat gluten
  • 1/4 cup Nutritional yeast
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbl chili powder
  • 1/2 cup water

Sauce

  • 1/2 cup pineapple juice
  • 1 Tbl adobo pepper sauce
  • 1 Tbl soy sauce
  • 1 tsp corn starch
  • 1/2 cup water
  • 1 cup chopped pineapple
  • 2 Tbl tomato paste

Assembly

  • Tortillas
  • Cilantro
  • Pineapple chunks

Preparation

  1. Drain the jackfruit and squeeze it in a clean kitchen towel to remove liquid.

  2. Chop the jackfruit and mix it with the dry ingredients.

  3. Add water and mix.

  4. Rip chunks of the seitan and place them in boiling water.

  5. Boil for 20 minutes.

  6. Drain and let cool.

  7. Chop into small chunks, about 1/4 inch.

  8. Sauté in a little oil until browned and set aside.

  9. Place all sauce ingredients in a blender and blend until smooth.

  10. Pour the sauce into the pan with the sautéed seitan chunks.

  11. Cook until the sauce is thick.

  12. Serve on a tortilla with cilantro and pineapple chunks.
