Coconut Semolina Halva

Ingredients

  • 2 cups sugar syrup
  • 1 cup fine semolina
  • 5 cups coconut

For garnish

  • Food coloring
  • Dried rose petals

Preparation

  1. Prepare a 9-inch square pan and line it with parchment paper, though the size is not strictly necessary

  2. In a saucepan, heat the sugar syrup on medium heat until it boils, then reduce the heat

  3. Add the semolina and stir with a wooden spoon until it absorbs the syrup and the mixture thickens

  4. Add a little coconut and continue stirring to combine with the semolina

  5. Remove the saucepan from heat and gradually add more coconut while stirring until the mixture thickens and is easy to shape

  6. Add food coloring if desired, and you can divide the mixture to have some plain and some colored

  7. Place the mixture in the pan and press it down to create an even layer

  8. Set aside for at least one hour or more to allow it to firm up

  9. Cut the halva into pieces, garnish it, and serve

Tips

  1. The amount of coconut used may vary depending on the type of semolina, its absorption rate, and the freshness of the coconut, with fresher coconut resulting in a softer mixture
