Coffee-Soaked Chocolate Cookies
Ingredients
Dough
- 1/2 cup softened butter
- 1/2 cup oil
- 1 cup sugar
- 1 large egg
- 3 tablespoons cocoa powder
- 2 1/2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
Soaking mixture
- 1 cup milk
- 1/2 cup sugar
- 1 tablespoon instant coffee
Decoration
- Melted white chocolate
- Toasted almond slices
Preparation
Preheat oven to 350°F (175°C).
In a bowl, cream together the softened butter, oil, and sugar until light and fluffy.
Add the egg and vanilla extract, and mix well.
In a separate bowl, combine the flour, cocoa powder, and baking powder.
Gradually add the dry ingredients to the wet mixture to form a dough.
Shape the dough into cookies and place on a baking sheet.
Bake for 10-12 minutes or until the edges are golden brown.
While cookies bake, prepare the soaking mixture by combining milk, sugar, and instant coffee in a bowl; stir until dissolved or heat gently if needed.
Allow cookies to cool completely after baking.
Dip the cooled cookies in the soaking mixture.
Decorate with melted white chocolate and toasted almond slices.
