Jam and Chocolate Biscuits
Ingredients
Filling
- 1/2 cup jam
- 1/2 cup finely ground pistachio
Dough
- 3 cups flour
- 2 tablespoons starch
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter at room temperature
- 1/2 cup corn oil
- 1/2 cup powdered sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
Decoration
- melted chocolate
Preparation
Preheat the oven to 180 degrees.
Prepare a wide shallow baking sheet and place a piece of parchment paper in it.
On a piece of parchment paper, sift the flour, starch, baking powder, and salt. Set aside.
In the mixer bowl, place the butter, oil, and sugar, attach the whisk attachment and beat lightly to combine.
Add the milk and vanilla, attach the paddle attachment and mix on low speed until well combined.
Add the flour gradually to get a smooth dough.
Using a rolling pin, roll out the dough between two sheets of parchment paper.
Cut into squares or as desired.
Place the biscuits on the baking sheet with space between each piece.
Bake until golden brown. Let it cool completely.
For the filling, place a little jam on a biscuit piece then place another piece on top with light pressure.
Decorate the sides of the biscuit with pistachio.
Tips
You can decorate with lines of melted chocolate.
