Macaroni Kabsa with Chicken

Ingredients

  • 1 teaspoon mixed spices
  • 1 teaspoon paprika
  • 1 teaspoon crushed hot pepper
  • 1 teaspoon turmeric
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons corn oil
  • 1 large chopped onion
  • 3 cloves crushed garlic
  • 1 tablespoon chopped ginger
  • 500 grams chopped chicken
  • 1 bell pepper
  • 2 bay leaves
  • 2 cinnamon sticks
  • 10 whole cardamom pods
  • 2 lemons
  • 3 tablespoons tomato paste
  • 300 grams macaroni

Preparation

  1. In a bowl, mix the spices, paprika, hot pepper, turmeric, salt and pepper, stir to combine and set aside

  2. In a pot, heat the oil, add onion, garlic, ginger and stir until wilted

  3. Add chicken and stir a little with onion

  4. Add bell pepper, bay leaves, cinnamon, cardamom, lemon, tomato paste

  5. Add half of the ground spice mixture

  6. Add 6 cups of water, cook chicken on medium heat for about 30 minutes until done

  7. Add macaroni and cook for a few minutes until done, you can add more water if desired for saucy or firm pasta

  8. Place in a dish and sprinkle with parsley

  9. Serve with lemon halves
