Macaroni Kabsa with Chicken
Ingredients
- 1 teaspoon mixed spices
- 1 teaspoon paprika
- 1 teaspoon crushed hot pepper
- 1 teaspoon turmeric
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 2 tablespoons corn oil
- 1 large chopped onion
- 3 cloves crushed garlic
- 1 tablespoon chopped ginger
- 500 grams chopped chicken
- 1 bell pepper
- 2 bay leaves
- 2 cinnamon sticks
- 10 whole cardamom pods
- 2 lemons
- 3 tablespoons tomato paste
- 300 grams macaroni
Preparation
In a bowl, mix the spices, paprika, hot pepper, turmeric, salt and pepper, stir to combine and set aside
In a pot, heat the oil, add onion, garlic, ginger and stir until wilted
Add chicken and stir a little with onion
Add bell pepper, bay leaves, cinnamon, cardamom, lemon, tomato paste
Add half of the ground spice mixture
Add 6 cups of water, cook chicken on medium heat for about 30 minutes until done
Add macaroni and cook for a few minutes until done, you can add more water if desired for saucy or firm pasta
Place in a dish and sprinkle with parsley
Serve with lemon halves
