Oven-Baked Turlu Vegetable Dish

Ingredients

  • 2 medium zucchini
  • 2 medium potatoes
  • 2 medium carrots
  • 2 large red tomatoes
  • 1/2 cauliflower
  • 1 large onion
  • 4 garlic cloves
  • 1 large sweet green pepper
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried mint or oregano
  • 1/4 teaspoon ground cinnamon
  • 2-3 tablespoons olive oil or corn oil

Preparation

  1. Preheat the oven to 190°C and prepare a medium-sized baking dish.

  2. Wash the vegetables thoroughly without peeling, then cut the zucchini into cubes or slices, potatoes into cubes, carrots into cubes or slices, tomatoes into cubes, cauliflower into florets, onion into cubes, garlic in half, and remove seeds from the pepper and cut into cubes.

  3. Place all the vegetables in the baking dish, sprinkle with salt, pepper, mint or oregano, cinnamon, and oil, then mix well to combine.

  4. Add 1/4 cup of water.

  5. Cover the dish with aluminum foil and bake in the oven for 30-35 minutes until the vegetables are cooked. Remove the foil during the last 10 minutes to allow browning, then serve hot.
