Puff Pastry Tarts with Vegetables and Spicy Chipotle Hummus
Ingredients
- 100 g spicy chipotle hummus
- 4 sheets puff pastry
- 1/2 red bell pepper
- 1/2 green bell pepper
- 1/2 yellow bell pepper
- 1/2 red onion
- 1/4 zucchini
- 100 g vegan feta
- Handful of fresh parsley, chopped
- Pinch of salt
Preparation
Preheat the oven to 200°C and line a baking sheet with parchment paper.
Slice the vegetables with a mandoline into thin slices about 3 mm thick.
Take the square puff pastry sheets and cut a 1 cm incision around the edge, but leave two opposite corners intact. Fold the cut triangles towards each other so that the sides rise after baking.
Brush the inside of each puff pastry tart with a generous layer of spicy chipotle hummus.
Top the tarts with the vegetable slices, alternating colors for a nice effect.
Sprinkle some vegan feta over the vegetables.
Bake the puff pastry tarts in the oven for 20-25 minutes, until the dough is golden brown and crispy and the vegan feta has melted.
Remove the tarts from the oven and sprinkle with extra vegan feta, chopped parsley, and a pinch of salt.
Serve immediately as a tasty side dish or snack.
