Swiss Rosti Potato Pancake

Ingredients

  • 4 russet potatoes
  • 2 tablespoons Earth Balance

Preparation

  1. Peel and shred the potatoes, place them in a bowl, and squeeze out excess moisture with your hands.

  2. Melt the Earth Balance and pour it into the bowl with the potatoes, then mix well.

  3. Heat a 12-inch pan over medium heat.

  4. Spoon the shredded potato mixture into the pan, keeping it fluffy without compacting it.

  5. Reduce the heat to medium-low and cook for 15 minutes or until golden brown.

  6. If not golden brown, cook for an additional 5 minutes.

  7. Place a baking sheet or cutting board over the pan and flip to release the rosti.

  8. Slide it back into the pan and cook the other side for another 15 minutes.

  9. Flip onto a cutting board, slice into 8 pieces, and serve with optional toppings like sour cream, chives, apple sauce, or jam.

Tips

  1. Use a non-stick pan or cast iron skillet for best results.

  2. Be patient during cooking to achieve a crispy exterior and creamy interior.
