Fluffy Mashed Potatoes with Garlic

Ingredients

  • 3 large russet potatoes, peeled and chopped (about 2 pounds)
  • 4 tablespoons Earth Balance (vegan butter)
  • 3 cloves garlic, pressed (roasted preferred)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon onion powder
  • 3/4 to 1 cup non-dairy milk

Preparation

  1. Boil the potatoes for 15 minutes.

  2. Drain the water.

  3. Mash the potatoes with 4 tablespoons of Earth Balance, 3 cloves of pressed garlic, 1 teaspoon of kosher salt, and 1/2 teaspoon of onion powder until well combined.

  4. Stir in 3/4 to 1 cup of non-dairy milk, adding more if desired.

  5. Top with a pad of Earth Balance and a sprinkle of dried parsley or fresh chives, then serve.

Tips

  1. Mash potatoes with butter before adding milk to coat the starch and ensure fluffiness.

  2. Total preparation time is about 20 minutes, with most of it being boiling time.
