Vegan Lentil Sloppy Joe Fries
Ingredients
- 1 cup dried French green lentils, rinsed
- 1 Tbsp non-dairy butter
- 1 Tbsp neutral oil
- 1 medium red bell pepper, minced
- 1 medium yellow onion, minced
- 3 cloves garlic, minced
- 2 Tbsp tomato paste
- 1/4 cup ketchup
- 8 oz tomato sauce
- 1/2 to 1 cup water
- 1 Tbsp organic brown sugar
- 2 tsp chili powder
- Worcestershire sauce
- 1/4 tsp red pepper flakes
- Kosher salt and pepper to taste
Preparation
Cook the lentils like pasta in salted water: bring to a boil and simmer until tender, about 20-30 minutes, then drain and set aside.
In a large Dutch oven or pot over medium heat, melt the butter and heat the oil. When hot, add the pepper and onion; cook for 3-5 minutes until soft.
Add the garlic and tomato paste; cook, stirring, until the paste caramelizes and turns a deep red, about 2-3 minutes. Then mix in the lentils to coat them.
Add the remaining ingredients along with 1/2 to 1 cup of water. Stir to incorporate and scrape up any brown bits from the bottom of the pot. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until flavors meld and the sauce thickens.

Serve on a bun with your favorite toppings or load it onto nachos, potatoes, or fries.
