Creamy Vegan Red Lentil Curry
Ingredients
- 1 cup red lentils
- 1 onion, diced
- 2 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 1 can coconut milk
- 2 tablespoons red curry paste
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 tablespoon olive oil
- 2 cups vegetable broth
- 1 cup fresh spinach
- Juice of 1 lime
- Fresh cilantro, for garnish
Preparation
Heat olive oil in a large pot over medium heat
Sauté onion, garlic, and ginger until softened
Stir in red curry paste, turmeric, cumin, paprika, and salt; cook for 1 minute
Add red lentils, vegetable broth, and coconut milk; bring to a boil
Reduce heat, cover, and simmer for 15-20 minutes until lentils are tender
Stir in fresh spinach and lime juice until spinach wilts
Serve hot, garnished with fresh cilantro
