Creamy Vegan Red Lentil Curry

Ingredients

  • 1 cup red lentils
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 2 cups vegetable broth
  • 1 cup fresh spinach
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Preparation

  1. Heat olive oil in a large pot over medium heat

  2. Sauté onion, garlic, and ginger until softened

  3. Stir in red curry paste, turmeric, cumin, paprika, and salt; cook for 1 minute

  4. Add red lentils, vegetable broth, and coconut milk; bring to a boil

  5. Reduce heat, cover, and simmer for 15-20 minutes until lentils are tender

  6. Stir in fresh spinach and lime juice until spinach wilts

  7. Serve hot, garnished with fresh cilantro
