White Chocolate Strawberry Blondies with Cheesecake Swirl

Ingredients

Dough

  • 125 g softened butter
  • 70 g sugar
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 2 large eggs
  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 200 g white chocolate
  • butter, for greasing the pan

Cheesecake swirl

  • 300 g cream cheese
  • 50 g sugar
  • 1 large egg
  • 1 tsp cornstarch
  • 200 g strawberries

Preparation

  1. Preheat oven to 180°C (160°C convection) and grease a 28.5 x 23 cm baking sheet

  2. Whip softened butter with sugar and vanilla sugar until combined, then gradually add eggs. Mix flour and baking powder, then add to the butter mixture

  3. Chop white chocolate and fold into the batter. Pour batter into the prepared pan and smooth the top

  4. In a separate bowl, whisk cream cheese, sugar, egg, and cornstarch until smooth. Spread the cream cheese mixture over the batter and swirl with a fork or knife to create a marbled effect

  5. Wash strawberries, remove stems, and chop into small pieces. Scatter strawberries over the batter and press lightly

  6. Bake for about 40 minutes

Tips

  1. To check for doneness, insert a wooden skewer; if it comes out with a few moist crumbs or clean, the blondies are done. For a moist texture, remove from the oven a few minutes early when there are still small crumbs on the skewer
