Ayam Betutu Indonesian Chicken
Ingredients
- 2 village chickens
- water as needed
- sugar as needed
- salt as needed
Fine spices
- 35 bird's eye chilies
- 1 tablespoon coriander
- 1 tablespoon shrimp paste
- 2 teaspoons pepper
- 4 candlenuts
- a thumb-sized piece of turmeric
Sliced spices
- 250 grams shallots
- 10 cloves garlic
- 3 thumb-sized pieces galangal
- 5 thumb-sized pieces kencur
- a thumb-sized piece turmeric
- 3 thumb-sized pieces ginger
- 15 bird's eye chilies
- 5 stalks lemongrass
Preparation
Sauté the fine spices and sliced spices until cooked and fragrant.
Add the cleaned chicken, and add salt and sugar.
Add water until the chicken is covered, cook on low heat until the chicken is very tender and the liquid reduces, but do not let it become too dry for better taste.
