Indonesian Smashed Fried Chicken

Ingredients

  • 1 whole free-range chicken
  • 1 stalk lemongrass
  • 2 bay leaves
  • 1 thumb-sized piece of galangal
  • Salt to taste
  • Sugar to taste

Spice paste

  • 5 cloves garlic
  • 3 candlenuts
  • 1 teaspoon coriander
  • 1 thumb-sized piece of ginger
  • 1 thumb-sized piece of turmeric

Sambal

  • 2 shallots
  • 5 red chilies
  • 5 bird's eye chilies
  • 1 packet baked shrimp paste
  • 1 small tomato
  • Salt to taste
  • Sugar to taste
  • Lime juice

Preparation

  1. In a pan, mix the chicken with the spice paste, bay leaves, lemongrass, galangal, salt, and a little sugar, let it marinate for about 15 minutes, then braise until cooked and set aside

  2. Fry the braised chicken until crispy and set aside

Sambal

  1. Grind the sambal ingredients except for the lime juice, taste and adjust seasoning, then add lime juice and mix well

Assembly

  1. Smash the fried chicken with the raw sambal and serve with fresh vegetables
