Spicy Jerk Lentils with Vegetables
Ingredients
Jerk spice blend
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- 1/4 tsp cayenne pepper
- 2 tsp dry thyme
- 2 tsp dry parsley
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp pepper
Lentils
- 1 cup dry lentils (I used black lentils)
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 inch ginger, minced
- 5 cloves garlic, minced
- 1 15oz can of diced tomatoes
- 1 1/2 tbsp jerk seasoning
- 2 tsp brown mustard
- 2 tsp maple syrup
- 3 cups mushroom or vegetable broth
- Juice of 1/2 a lime
- Zest of one lime
Preparation
Prepare spice blend
Combine all spices in a jar and mix well
Cook lentils
In a medium pot, add onion and sauté until softened
Add ginger, garlic and bell pepper and sauté until fragrant
Add lentils, tomatoes, jerk seasoning, mustard and maple syrup and stir to combine
Add broth, bring to a boil and reduce to a simmer
Cover and cook for 25 minutes or until most of liquid is absorbed
Add lime zest and lime juice, stir and remove from heat to serve

This recipe is inspired by jerk seasoning and was refined with input from a Jamaican client for authenticity
