Vegan Mushroom Tomato Pasta
Ingredients
- 1 Box Big Green Organic Food Buckwheat Rotini Pasta
- 1 onion
- 1 cup mushrooms
- 4 garlic cloves
- 1/4 cup fresh basil
- 2 tsp Italian seasoning
- 2 cups tomato puree
- 1 cup diced tomatoes
- 1 tbsp nutritional yeast
- 1 tbsp olive oil
Preparation
Begin by cooking the buckwheat rotini according to the package instructions.
Next dice the onions, mince the garlic and basil and slice the mushrooms. Add to a saute pan with the olive oil and cook until soft and golden.
Add the remaining ingredients and bring to a soft boil. Add the buckwheat rotini and mix until everything is evenly coated. Serve and enjoy!
