Vegan Mushroom Tomato Pasta

Ingredients

  • 1 Box Big Green Organic Food Buckwheat Rotini Pasta
  • 1 onion
  • 1 cup mushrooms
  • 4 garlic cloves
  • 1/4 cup fresh basil
  • 2 tsp Italian seasoning
  • 2 cups tomato puree
  • 1 cup diced tomatoes
  • 1 tbsp nutritional yeast
  • 1 tbsp olive oil

Preparation

  1. Begin by cooking the buckwheat rotini according to the package instructions.

  2. Next dice the onions, mince the garlic and basil and slice the mushrooms. Add to a saute pan with the olive oil and cook until soft and golden.

  3. Add the remaining ingredients and bring to a soft boil. Add the buckwheat rotini and mix until everything is evenly coated. Serve and enjoy!
