Vegan One-Pot Pasta

Ingredients

  • 1 1/2 cups Cherry tomatoes
  • 1/2 Yellow onion diced
  • 1 cup Mushrooms diced
  • 1/4 Bell pepper diced
  • 250g Extra firm tofu crumbled
  • 3 1/2 tbsp Tomato paste
  • 2 tbsp Balsamic vinegar
  • 1/4 cup Nutritional yeast
  • 1 tsp Dried chili flakes
  • 2 tbsp Dried parsley
  • 4 cloves Garlic minced
  • 2 cups Whole wheat penne or pasta of choice
  • 3 cups Vegetable broth
  • 1 cup Spinach

Preparation

  1. Heat your pan and drizzle with oil as desired.

  2. Add all ingredients to a deep pan or pot. Bring to a boil, and then simmer until pasta is al dente.

  3. Allow to cool slightly for the “sauce” to thicken. Stir in spinach to serve.
