Savory Vegan Oats with Vegetables

Ingredients

  • drizzle of olive oil
  • 2 cloves of garlic
  • 2 handfuls of spinach
  • a handful of chopped cherry tomatoes
  • 1/2 cup oats
  • 2 tbsp nutritional yeast
  • 1 1/2 cup vegetable broth

Toppings

  • avocado
  • spring onion
  • vegan feta
  • chili oil

Preparation

  1. Drizzle olive oil in a pan over medium heat.

  2. Grate the garlic and cook until fragrant.

  3. Then add the spinach and cook for several minutes.

  4. Add the cherry tomatoes, oats, nutritional yeast, and broth.

  5. Cook for 5-7 minutes until most of the liquid has absorbed.

  6. Transfer the oats to a bowl, then top, dig in, and enjoy.
