Baked and Fried Leftover Roti Samosa
Ingredients
Stuffing
- 3 medium boiled potatoes
- 1/4 cup green peas
- Fresh coriander leaves
- Small piece of ginger
- Few green chilies
- Turmeric powder
- Dry coriander powder
- Chili powder
- Garam masala
- Aamchoor powder
- Salt
- Oil
- Cumin seeds
- Fennel seeds
- Asafoetida
Wrapper
- Leftover rotis
- Maida flour for slurry
Preparation
Heat oil in a pan and add cumin seeds, fennel seeds, and asafoetida
Add green chili and ginger, then fry them well
Add boiled potatoes, green peas, dry masalas, and salt, then mix well
Add fresh coriander, mix thoroughly, and allow to cool
Cut chapati in half and apply maida slurry on the borders
Fold the chapati to create a cone shape
Fill the cone with the stuffing
Apply more maida slurry and seal to form the samosa shape
For baking, brush with a little oil and bake at 190°C until golden brown
Alternatively, fry the samosas until golden brown
Tips
Serve with mint chutney for best flavor
