Chicken Pesto Rice Bake

Ingredients

  • 40g white long grain rice
  • 160g chicken breast, diced
  • 20g green pesto
  • 50g low-fat Greek yoghurt
  • Handful chopped spinach
  • Handful finely diced red onion
  • 80ml chicken stock
  • 2-3 sundried tomatoes, chopped

Preparation

  1. Preheat oven to 180°C (360°F)

  2. Combine all ingredients in an oven-safe bowl or dish

  3. Bake for about 45-60 minutes, checking for doneness; rice should be tender and chicken cooked through
