Chicken Pesto Rice Bake
Ingredients
- 40g white long grain rice
- 160g chicken breast, diced
- 20g green pesto
- 50g low-fat Greek yoghurt
- Handful chopped spinach
- Handful finely diced red onion
- 80ml chicken stock
- 2-3 sundried tomatoes, chopped
Preparation
Preheat oven to 180°C (360°F)
Combine all ingredients in an oven-safe bowl or dish
Bake for about 45-60 minutes, checking for doneness; rice should be tender and chicken cooked through
