Baked Chicken with Vegetables

Ingredients

  • 500 g chicken breast
  • 3-4 potatoes
  • 2 red bell peppers
  • 5 green bell peppers
  • 2 carrots
  • 1 onion
  • 3 cloves garlic

Sauce

  • 1 tablespoon tomato paste
  • 1/4 cup olive oil
  • 1 cup water
  • 1 teaspoon thyme
  • 1 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • Salt to taste

Preparation

  1. Cut the chicken into cubes.

  2. Cut all the vegetables into cubes.

  3. Pour all the chopped ingredients into a suitable baking dish.

  4. Mix the sauce ingredients and pour over the vegetables, then mix well.

  5. Lightly press with hands, smooth out, and cover with parchment paper.

  6. Place in a preheated 190-degree oven to bake.

  7. When almost done, remove from oven, stir once, and return to oven without parchment paper.

  8. Bake a bit more and remove from oven.
