Chipotle Sweet Potato Fries and Beef Burgers

Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • chipotle powder
  • pink Himalayan salt
  • 1/2 onion
  • 1/2 cup mushrooms
  • 1/2 cup spinach
  • 1 pound ground beef
  • 1 teaspoon garlic
  • 1/2 teaspoon onion powder
  • 1 teaspoon chili powder
  • salt to taste

Preparation

  1. Cut 2 large sweet potatoes into fries and coat with 1 tablespoon olive oil, chipotle powder, and pink Himalayan salt.

  2. Bake the sweet potato fries at 425°F for 30 minutes, then for an additional 15 minutes.

  3. In a pan, sauté 1/2 diced onion, 1/2 cup chopped mushrooms, and 1/2 cup chopped spinach in olive oil for 5 minutes.

  4. In a bowl, combine the sautéed vegetables with 1 pound ground beef, 1 teaspoon garlic, 1/2 teaspoon onion powder, 1 teaspoon chili powder, and a sprinkle of salt.

  5. Form the mixture into 7 burger patties.

  6. Cook the burgers over medium heat in olive oil for 5 minutes on each side.

  7. Transfer the burgers to the oven and bake at 425°F for 5 minutes.

  8. Check the internal temperature to ensure the burgers are done.
