Hearty Sweet Potato and Kale Soup

Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 sweet potato
  • 1/2 onion
  • 1 cup mushrooms
  • 1 bunch kale
  • 2 tablespoons olive oil
  • 1 can full-fat coconut milk
  • 32 ounces beef broth
  • Garlic, Italian herbs, salt, and pepper to taste
  • Nutritional yeast (optional)

Preparation

  1. Cook the meat and set aside.

  2. In a large pot, add cooking fat, onion, sweet potato, and mushrooms, and sauté for a few minutes.

  3. Add broth and bring to a boil.

  4. Lower the heat, add kale, cooked meat, and spices, and simmer for 15-20 minutes.

  5. Add coconut milk and warm through.

  6. Serve and enjoy.
