Hearty Sweet Potato and Kale Soup
Ingredients
- 1 pound ground beef or Italian sausage
- 1 sweet potato
- 1/2 onion
- 1 cup mushrooms
- 1 bunch kale
- 2 tablespoons olive oil
- 1 can full-fat coconut milk
- 32 ounces beef broth
- Garlic, Italian herbs, salt, and pepper to taste
- Nutritional yeast (optional)
Preparation
Cook the meat and set aside.
In a large pot, add cooking fat, onion, sweet potato, and mushrooms, and sauté for a few minutes.
Add broth and bring to a boil.
Lower the heat, add kale, cooked meat, and spices, and simmer for 15-20 minutes.
Add coconut milk and warm through.
Serve and enjoy.
