Crispy Bbq Chickpea Croutons

Ingredients

  • 1 can chickpeas
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 3 tbsp tapioca flour
  • 1/2 cup BBQ sauce (low sugar)
  • 2 cups seasoned bread crumbs

Preparation

  1. Rinse, drain, and towel dry the chickpeas.

  2. Season the chickpeas with salt and pepper.

  3. Set up three stations for breading: one bowl with tapioca flour, one bowl with BBQ sauce, and a plate with seasoned bread crumbs. Line a large baking sheet with parchment paper misted with oil.

  4. Add the chickpeas to the tapioca flour and mix until all are coated, then coat in BBQ sauce, and place in bread crumbs ensuring they are fully breaded. Use a large dry spoon to transfer to the baking sheet, separating any that are stuck together and spacing them for crisping.

  5. Bake at 400°F until the coating is golden and crisp, shaking the pan halfway through, for about 15-20 minutes, or air fry in batches at 400°F for 7-10 minutes.

Serving suggestions

  1. Serve the croutons warm or at room temperature as a salad topper with your favorite dressing or as a pita filling.
