Crispy Sticky Oven-Baked Cauliflower

Ingredients

  • 1 head cauliflower

Batter

  • 1 cup plant-based milk
  • 1 cup flour
  • 3 tbsp cornflour
  • Salt and black pepper to taste
  • 1 tsp garlic granules
  • 1 tbsp soy sauce

Optional breadcrumbs

  • Breadcrumbs
  • 2 tbsp corn flour

Sauce

  • 2 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp maple syrup
  • 3 tbsp brown sugar
  • 3 tbsp soy sauce
  • 3-4 tbsp water
  • 1 tbsp tomato puree
  • 1 tbsp vinegar
  • 1 tsp chilli flakes
  • 1 tbsp cornflour
  • 1 tbsp water

Preparation

  1. Preheat oven to 200°C

  2. Cut cauliflower into florets

  3. Prepare the batter by mixing all batter ingredients in a bowl

  4. Dip cauliflower florets in batter, and optionally coat with breadcrumb mixture

  5. Place coated cauliflower on a baking tray and bake until crispy, about 20-25 minutes

  6. Meanwhile, prepare the sauce: heat a pan, add garlic and ginger, cook for 1 minute, then add maple syrup, brown sugar, soy sauce, water, tomato puree, vinegar, and chilli flakes; simmer and thicken with cornflour mixed with water

  7. Toss the baked cauliflower in the sauce and serve
