Crispy Sticky Oven-Baked Cauliflower
Ingredients
- 1 head cauliflower
Batter
- 1 cup plant-based milk
- 1 cup flour
- 3 tbsp cornflour
- Salt and black pepper to taste
- 1 tsp garlic granules
- 1 tbsp soy sauce
Optional breadcrumbs
- Breadcrumbs
- 2 tbsp corn flour
Sauce
- 2 cloves garlic
- 1 tbsp fresh ginger
- 2 tbsp maple syrup
- 3 tbsp brown sugar
- 3 tbsp soy sauce
- 3-4 tbsp water
- 1 tbsp tomato puree
- 1 tbsp vinegar
- 1 tsp chilli flakes
- 1 tbsp cornflour
- 1 tbsp water
Preparation
Preheat oven to 200°C
Cut cauliflower into florets
Prepare the batter by mixing all batter ingredients in a bowl
Dip cauliflower florets in batter, and optionally coat with breadcrumb mixture
Place coated cauliflower on a baking tray and bake until crispy, about 20-25 minutes
Meanwhile, prepare the sauce: heat a pan, add garlic and ginger, cook for 1 minute, then add maple syrup, brown sugar, soy sauce, water, tomato puree, vinegar, and chilli flakes; simmer and thicken with cornflour mixed with water
Toss the baked cauliflower in the sauce and serve
