Spicy Oven-Baked Cauliflower with Sweet Chilli Sauce

Ingredients

  • 1 small cauliflower
  • 1/3 cup flour (can be gluten-free)
  • 1/3 cup water
  • pinch of salt and pepper
  • pinch of garlic and onion powder
  • 3 tbsp sweet chilli sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1/2 tsp chilli flakes
  • 1/4 tsp chilli powder
  • 1/3 cup vegetable stock
  • 1 tsp cornflour

Preparation

  1. Mix flour, water, a pinch of salt and pepper, and a pinch of garlic and onion powder to form a batter, then coat the cauliflower with it.

  2. Place the coated cauliflower in the oven at 180°C and spray with a little oil, then cook for 40 minutes or until golden.

  3. Mix all sauce ingredients (sweet chilli sauce, apple cider vinegar, soy sauce, chilli flakes, chilli powder, and vegetable stock) in a pan and place over medium heat.

  4. Add the cornflour mixture (cornflour mixed with water to form a slurry) and stir until the sauce thickens.

  5. Coat the cooked cauliflower with the thickened sauce and serve.
