Doña Emilia Corn Flour Cookies

Ingredients

  • 100g melted butter (1/2 cup)
  • 1 egg
  • 1/2 tablespoon orange essence
  • 100g brown sugar (1/2 cup)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1 cup precooked corn flour

Preparation

  1. Beat the melted butter, egg, and orange essence until well combined.

  2. Add the brown sugar and mix until integrated.

  3. Add the baking powder, cinnamon, and salt, and beat until united.

  4. Add the precooked corn flour and mix with a spatula until all ingredients are well integrated.

  5. Cover the mixture with plastic wrap and freeze for 15 minutes.

  6. Remove from freezer, grease your hands, take a 50g portion, form into a ball, place on a baking sheet lined with parchment paper, flatten slightly, and optionally add a little jam to some cookies.

  7. Bake in a preheated oven at 190°C for 15 minutes or until the edges are golden.

  8. Remove from oven and let cool on a cooling rack.

Decoration tips

  1. Once the cookies are cool, decorate with powdered sugar or cover with white chocolate and sprinkles as preferred.
