Crunchy Whole Grain Cookies with Dark Chocolate

Ingredients

  • 150 g rolled oats
  • 150 g whole wheat flour
  • 70 g brown sugar
  • 1 tsp baking powder
  • a pinch of salt
  • 150 g butter
  • a pinch of cinnamon or cardamom
  • 200 g dark chocolate

Preparation

  1. Grind rolled oats in a food processor or blender until fine (about the texture of ground nuts)

  2. Mix the ground oats with whole wheat flour, brown sugar, baking powder, salt, and cinnamon or cardamom (if using)

  3. Add cold butter, cut into small pieces, and knead until a smooth dough forms

  4. Shape the dough into a flat disc, wrap in plastic wrap, and chill for at least 30 minutes

  5. Preheat the oven to 180°C (350°F) conventional or 160°C (320°F) fan-forced

  6. Remove the dough from the refrigerator and place on a lightly floured surface, covered with plastic wrap

  7. Roll the dough to about 0.4 cm thickness and cut into shapes

  8. Place the shapes on a baking sheet lined with parchment paper

  9. Bake for about 15 minutes until golden

  10. Let the cookies cool completely on the baking sheet

  11. Finely chop the dark chocolate and melt over a double boiler

  12. Spread the melted chocolate on the bottom of each cookie with a teaspoon

  13. Let the chocolate set completely

Tips

  1. Instead of rolled oats, use ground hazelnuts or almonds for a nutty flavor
