Classic American Cinnamon Sugar Snickerdoodle Cookies
Ingredients
Dough
- 380 g all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tsp ground cinnamon
- a pinch of salt
- 225 g softened butter
- 1 tsp vanilla extract
- 180 g granulated sugar
- 2 large eggs
Topping
- 70 g granulated sugar
- 3 tsp ground cinnamon
Preparation
Whisk together flour, baking powder, baking soda, cinnamon, and salt
Beat softened butter, vanilla extract, and sugar until creamy
Add eggs one at a time, mixing well
Add butter mixture to flour mixture and mix until combined
In a small bowl, mix sugar and cinnamon for the topping
With a teaspoon, take small portions of dough and roll into balls
Roll balls in cinnamon-sugar mixture
Place on a parchment-lined baking sheet and flatten slightly
Leave space between cookies as they spread during baking
Preheat oven to 190°C (conventional) or 170°C (convection)
Sprinkle the remaining cinnamon-sugar mixture over the cookies
Bake for about 10 minutes
Flatten slightly with a spatula
Let cool

Chill the cookies before serving for best results; they taste especially delicious cold from the refrigerator
