Easy Fudgy Vegan Brownies
Ingredients
- 150g block vegan butter
- 160g dark chocolate
- 1 cup coconut sugar
- 1 cup milk
- 1 tsp vanilla
- 1/3 cup cacao
- 3/4 cup spelt flour
- 1 cup plus 1 tbsp ground almonds
- 1 tbsp coconut flour
- Large pinch salt
- 1 tsp baking powder
- 80g dark chocolate, chopped
Ganache
- 100g dark chocolate
- 1/4 cup vegan cream
Preparation
Preheat oven to 180C and line a square tin.
Gently melt together the butter and dark chocolate, then stir in the coconut sugar, milk and vanilla. Set aside to cool for a few minutes.
Combine the cacao, spelt flour, ground almonds, coconut flour, salt and baking powder. Fold in the chocolate mix until combined, then stir in chocolate chips, ensuring the mixture isn’t warm to avoid melting them.
Pour into the prepared tin and bake for 20-25 minutes, or until set on top and the brownies are coming away from the sides of the tin. They should still be slightly wobbly in the middle. Let cool completely, then slice and enjoy.
Ganache
Optionally, melt the dark chocolate with the vegan cream to make ganache and drizzle over the brownies before serving.
