Ghost Shaped Linzer Cookies
Ingredients
- 2 cups all-purpose flour
- 1 cup almond flour
- 3/4 tsp fine sea salt
- 1 cup unsalted butter, room temperature
- 2/3 cup sugar
- 1 tsp vanilla extract
- 1 egg
- zest of 1 lemon
- Powdered sugar, for dusting
- Any flavor of jam, for filling
Preparation
Mix all-purpose flour, almond flour and salt.
Beat butter and sugar until fluffy. Add vanilla, extract, egg, and zest, then mix.
Combine wet and dry mixtures.
Shape dough into a disk, wrap, and chill for 30-60 minutes.
Preheat oven to 350°F and line a baking sheet.
Roll dough to 1/4-inch thick. Use a heart-shaped cookie cutter to cut out shapes, then cut each shape in half. For the eyes, use the small end of a piping tip to create two small holes. For the mouth, use the larger opening. Gently tilt and press the cookie slightly to give it a ghost-like appearance.
Bake for 11-13 minutes until golden.
Cool on a wire rack.
Dust cookies with powdered sugar, spread jam, and sandwich together.
