Homemade Twix Candy Bites
Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tbsp cornstarch
- 1/2 tsp table salt
Caramel sauce
- 1 cup granulated sugar
- 1/4 cup water
- 6 tablespoons unsalted butter, cut into pieces
- 1/2 cup heavy cream
- 1 tsp vanilla
- pinch of salt
- 1 cup milk and dark chocolate, chopped
Preparation
Beat butter until smooth and creamy. Gradually add sugar, beating until light and fluffy. Stir in vanilla.
Whisk together flour, cornstarch, and salt. Gradually add to the wet ingredients until fully combined.
Form dough into a disc, wrap in plastic, and chill for 60 minutes.
Preheat oven to 350°F (175°C). Roll dough to 1/8 - 1/4 inch thick on a floured surface, cut cookies, and place on a lined baking sheet.
Bake for 9-11 minutes or until edges turn light golden brown.
Caramel making
Add sugar and water to a saucepan, stir to create an even layer, and cook over medium heat until sugar dissolves and bubbles (about 3-4 minutes).
Without stirring, let the mixture bubble and swirl the pan occasionally until it turns deep amber (8-12 minutes).
Carefully whisk in butter, then remove from heat and slowly add cream, whisking constantly.
Stir in vanilla and salt. Cool for 10 minutes, then transfer to a jar and let it cool completely.
Assembly
Melt chocolate in a saucepan over low heat. Remove from heat.
Coat mold walls with chocolate, refrigerate for 5 minutes to set.
Fill molds with caramel then with biscuit, leaving room to seal with more chocolate.
Reheat chocolate, cover the filling, and tap molds to remove bubbles.
Refrigerate to set.
