Must-Have Spooky Halloween Bat Cupcakes

Ingredients

Muffin batter

  • 125 g softened butter
  • 130 g sugar
  • 1 pinch vanilla extract
  • 2 medium eggs
  • 100 g all-purpose flour
  • 2 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 75 ml milk

Frosting

  • 200 g cream cheese
  • 2 tablespoons powdered sugar
  • 125 g softened butter
  • 1 pinch vanilla extract

Bat decorations

  • 2 tablespoons powdered sugar
  • 1-2 tablespoons water
  • 24 chocolate sandwich cookies
  • 24 sugar eyes

Preparation

  1. Cream together butter, sugar, and vanilla extract. Gradually add eggs and mix. Line muffin tin cups with paper liners

  2. Mix flour, cocoa powder, baking powder, and salt. Add to the batter alternately with milk and mix well. Preheat oven to 180°C (convection: 160°C). Divide batter into the prepared liners. Bake muffins in the preheated oven for about 20 minutes. Let cool

  3. For the topping, beat cream cheese, powdered sugar, butter, and vanilla extract until smooth. Transfer to a piping bag with a star tip and pipe a dollop of frosting onto each cooled muffin. Chill the muffins

  4. For the bats, mix powdered sugar with 1-2 tablespoons water until smooth and no lumps remain. If the icing is too thin, add another tablespoon of powdered sugar and mix again. Transfer icing to a piping bag and cut a small hole at the tip

  5. Prepare 12 chocolate sandwich cookies. Place two dots of icing on each cookie for eyes and attach sugar eyes. Let dry

  6. Carefully cut the remaining 12 cookies in half. Just before serving, take muffins out of the refrigerator and insert one cookie with the face into the center of each cupcake on the frosting. Place one Oreo half on each side as wings
