Grain-Free Feta Chicken Meatballs with Veggies
Ingredients
- 1/2 medium onion, finely diced
- 3 ounces spinach, chopped
- olive oil
- 2 garlic cloves, minced
- salt and pepper
- ground chicken or turkey
- 1/3 cup crumbled feta
- 1 egg
- 1 teaspoon garlic powder
- chili flakes
Preparation
Sauté the onion and spinach in olive oil for 5 minutes.
Add garlic, salt, and pepper, and sauté for 1 more minute.
Combine the spinach mixture with ground chicken or turkey, feta, egg, garlic powder, and chili flakes in a bowl.
Bake at 400 degrees Fahrenheit for 20 minutes.
Broil for 2 minutes.
Serving suggestions
Enjoy with a chopped spinach salad, over rice, pasta, or with pita and tzatziki.
