Grain-Free Feta Chicken Meatballs with Veggies

Ingredients

  • 1/2 medium onion, finely diced
  • 3 ounces spinach, chopped
  • olive oil
  • 2 garlic cloves, minced
  • salt and pepper
  • ground chicken or turkey
  • 1/3 cup crumbled feta
  • 1 egg
  • 1 teaspoon garlic powder
  • chili flakes

Preparation

  1. Sauté the onion and spinach in olive oil for 5 minutes.

  2. Add garlic, salt, and pepper, and sauté for 1 more minute.

  3. Combine the spinach mixture with ground chicken or turkey, feta, egg, garlic powder, and chili flakes in a bowl.

  4. Bake at 400 degrees Fahrenheit for 20 minutes.

  5. Broil for 2 minutes.

Serving suggestions

  1. Enjoy with a chopped spinach salad, over rice, pasta, or with pita and tzatziki.
